Reporting to VP of R&D, led all product development for 4,500+ Tim Hortons restaurants in Canada, USA and International. Responsible for all menu items and day parts, directly managed a team of Senior Product Developers. Researched and collaborated with Marketing to identify food trends, and construct robust promotional calendars by developing menu items from concept through commercial production. Approved all formulas and maintained the product specification database. • Launched over 300 menu items successfully, averaging 5% increase per year to same store sales • Performed reformulation as required for simplification, cost reduction, regulatory compliance • Conducted sensory testing as required, measured against hurdles in order to launch products • Approved all formulations and maintained product specifications • Oversaw all major first productions and approved manufacturing on the spot

Reporting to the Chief Scientist/Technical Director, was responsible for innovating within all bakery products produced at the facility (donuts, bread, and laminated dough items). Created formulas and produced from scratch all initial product samples to be shown at Tim Hortons head office. • Maintained all product specifications and plant process settings • Ability to make every product that was commercially produced from scratch • Product testing on wheat quality, oil quality and functionality of prepared bakery mixes
