- Part of Processing team in the commissioning of Evaporated Milk and cheese project. - Mechanical inspection of all the lines and equipments according to the approved P&ID's. - Configuration of field instruments with the PLC. - IO checks for field instruments. - SNAG listings with respect to production and quality. - Passivation, CIP, SIP validation. - Water trials for the evaporator and processed cheese UHT. - Product trials for Evaporated Milk on the evaporator and processed cheese trials in the cheese UHT system. - Troubleshooting the process deviations during processing. - Preparation of SOP's and logsheets for each unit operations. - Optimising the processing losses .

• Learned modern technology with automation tools in the dairy. Observed the production process related to raw milk processing, UHT processing of milk and its flexi pack packaging. • Learnt the large scale production of cheddar cheese (20 tonnes per day capacity) and it's technology. Mozzarella cheese manufacturing and it's technology of Maturation ,stretching and effect of change in pH on final product - Diced and shredded. Processed cheese manufacturing - Ingredients selection and their technological significance.

•Learnt large scale handling of liquid milk and the milk powder along with the dairy whitener manufacture.Assuming the product quality with respect to physical,chemical and microbiological standards. • Keenly observed the manufacturing of butter, ghee, paneer, flavoured milks, yoghurt, UHT tetrapack filling and ice cream. • Involved in the testing of all the products which are manufacturing in the unit with respect to chemical and microbiological standards.

Gained knowledge related to technology of fluid milk, paneer, khoa, lassi, milk powder, ice cream, yoghurt and ghee under the guidance of experienced lecturers. Learned in detail from procurement of raw milk to till sales of variety of dairy products including the testing with respect to microbiological and chemical quality of various dairy products.
