Set on a luxury barge in the South of France, I had complete responsibility for the menu writing and sourcing of local ingredients. Looking after 10 guests, I prepared an exemplary three-course lunch and five-course dinner, with the addition of canapes, wine pairings and regional cheeses. Continually interacting with guests, I helped create an entirely personal, unique and tailored customer experience.

Managing a team of Chefs and Hosts, I upheld and drove forward the standards of 3 Luxury Catered Chalets in the Alps. While leading structured training programmes for the team, I orchestrated new food buying methods, wrote the seasonal menus, ran procurement procedures and ensured all guests were having a one of a kind experience.

Working closely with suppliers, the sous and head chef, I had entire responsibility for the running of my section in the kitchen. Classical technique, with modern approach brought the best of seasonal ingredients to the table. While honing skills on sauce, garnish and larder, I implemented strict stock management and maintained rigorous health and safety standards. Acting as a mentor to the junior members of the team, the Restaurant upheld its standard as one of the best in London.

As part of a large team of chefs, I work alongside others to deliver outstanding food and service to anything from a 'small bowls' meal at private households, to feeding upwards of a thousand people at events such as the Bristol Balloon Fiesta. Having to work individually on small projects, I manage my time and resources accordingly to create the best experience for our clients. For larger events such as weddings and banquets, I manage a small team of chefs to produce the food and then run a smooth service when on site.
