I am a trade qualified chef with more than 15 years’ experience in the hospitality industry. I have acquired an in-depth knowledge of every aspect of an operation, including kitchen and menu design, budgeting, operating procedures, staffing and best practice. I have extensive experience in major-event operations and logistics and am currently responsible for large brigades across multiple sites. In the last 12 months, I have been responsible for the Canberra delivery of the Cricket World Cup, the Big Bash League, the Asian Football Cup and Floriade, which had 400,000 visitors across a green-field site and encompassed two large casual dining venues and 18 quick-service food outlets. I am heavily involved in key stakeholder management that requires me to negotiate with a variety of sectors including international sporting bodies, government departments and large multinational corporations. My tertiary qualifications in marketing enable me to communicate and deliver creative dining concepts that complement the brand and vision of the company.
