Research topic: “Human zinc nutrition in arid regions with zinc deficiency in soils and crops.” This was an interdisciplinary program of environmental, agricultural, and nutritional studies in Environmental Nutrition. A summary of my work included: 1) assessing the major dietary zinc sources as well as zinc bio-availability in the food taking account of phytic acid, as the main inhibitor of zinc bio-availability in the food, 2) determining dietary zinc intake as well as zinc status of the study populations, taking account also of iron, and 3) assessing possible food-based strategies to improve human zinc nutrition.
