At Paseo, Centrico, and Tiendita, I serve as the General Manager overseeing multiple locations. These establishments represent three distinct restaurant concepts, each curated to provide our guests with an immersive and authentic Mexican dining experience crafted by renowned Michelin-starred Chef Carlos Gaytán. Located in the vibrant heart of Downtown Disney in Anaheim, California, our venues offer a journey through the rich flavors and traditions of Mexico. In my role as General Manager, I bring to the table a wealth of knowledge in food, wine, and spirits, ensuring that every aspect of our guests' dining experience is exceptional. My dedication lies in creating unforgettable moments for our patrons, driven by a deep understanding of the intricacies of hospitality. Moreover, I possess a comprehensive understanding of business financials, encompassing annual budget oversight, labor management, operational expenses, and P&L analysis. With a guest-centric approach, I lead by example, inspiring my team to deliver excellence in service within the dynamic and fast-paced environment of high-volume operations.

Overseen all operations from front of house to back of house to ensure compliance with company polices, regulations and food safety guidelines. Produce monthly reports detailing sales trends and forecasts. Supervise over 80 employees. Consistently exceed daily, weekly and monthly sales targets while maintaining cost and keeping employee turnover low. Drove increase in mid week sales by 12% through local marketing and social media. Boosted staff performance through improved training and accountability.

Responsible for all functions of the restaurant including guest relations, supervision of all staffing levels, proper restaurant ambiance, housekeeping, food & beverage quality, safety and pace. I set the standard for service expectations by scrutinizing every aspect of the guest's experience from start to finish and I personally intervene to correct below standard service issues. I positively coach and counsel staff to achieve the highest quality of service in all areas of the restaurant.

Managed all daily operations of this full-service, casual restaurant. Began working for production and after one month, I was promoted into the Quality Assurance department and was in charge of 3 multi-million dollar product lines.
