My passion for food began on a month long trip to Kaua’i that lasted 5 years. I quickly found myself emerged in all aspects of food. My early mornings were spent working on an organic farm, my evenings spent in the kitchen at Postcards Cafe where I began to learn how to cook. My next journey brought me home to New York and the Culinary Institute of America. I went to Greens restaurant in San Francisco for my internship. There, I learned vegetables are much more then an addition to a meal, there they are the main event. After graduating from the CIA, I went to New York City to work in the finest kitchens and learn from the best of the best. I worked at Esca, cooking italian seafood. Gotham Bar and Grill, cooking high towers of american cuisine and The Spice Market cooking South East Asian and Thai. The next stop on my journey has placed me in the Hudson Valley, where I live and am raising my son Giovanni. I was the chef at the Garden Street Cafe creating imaginative, healthy vegetarian fare. It is now time for me to put my education, and experience together and show my vision. It all starts with simply using fresh, local, and organic ingredients.
