Food company specialized in providing healthier alternative snack for kids

Cornell FPDL is Cornell-owned pilot plant specializing in cheese and yogurt production to be sold at Cornell’s Dairy Bar. It also provides services for external companies to test new products. • Assisted in the production of various cheeses, yogurt and ice cream. • Maintained food safety by performing sanitation procedures. • Performed recordkeeping of pH, temperature, and time during production. • Gained familiarity with specialized equipment such as homogenizer, spray drier, plate heat exchanger and cross flow filtration. • Assisted in small scale production test conducted by external companies.

Led a team of five, to develop a healthy snack for kids age 10 and under starting from market research, product ideation, formulation and processing, nutritional analysis, shelf life, packaging, cost evaluation and marketing.

• Presented new innovation plan to management team in meeting consumer demand for vegetable-based and high-protein food for one of the company's best selling products by conducting a series of experimentation from formulation to prototype creation • Performed sensory testings to evaluate shelf life and reformulation of food products • Assisted Quality Assurance team to determine Essential Quality Attributes (EQA). • Generated nutrition facts using Genesis R&D food labeling software. • Became a sensory panelist for mac and cheese, cookies, soup, etc. • Maintained a clean and tidy test kitchen through Good Manufacturing Practices. • Engaged in protocept fair; direct meeting with target consumers (parents and kids) to gain consumer insights on new food product ideas.

• Participated in accelerated shelf life testing of food products. Assisted in improving the methodology to determine shelf life of cereal bar with regards to moisture content and relative humidity • Developed formulation for low calorie oatmeal cookie. The project manager showed great interest upon the result and the formulated cookie was further advocated to the marketing department. • Became a panelist in sensory testing. Prepared food samples and organized data results for sensory tests.

Mentored 3 to 5 new international students every 4 month period, to help them adapt to a new culture and succeed academically.
