Holly Cuthbertson

I am currently working as a Research Assosciate for Birkenwood International Pty Ltd under Dr Rod Polkinghorne and Judy Philpott. I have a 1st class honours degree in Animal and Veterinary BioScience and a PhD in Agriculture specialising in Animal Health and Welfare from The University of Sydney. My PhD work involved using infrared thermography for the detection of stress and poor meat quality in beef cattle. My work developed an appropriate methodology to process and analyse infrared data in cattle under commercial conditions. Throughout my PhD I have frequently presented at industry meetings with highly regarded professionals from the animal and meat sector. I have a particular interest in the pre-slaughter phase, animal welfare and it’s effect on overall meat quality. I have been actively involved in several MLA projects and work regularly in Australian abattoirs and alongside producers. I have also had many teaching opportunities throughout my time at Sydney University and also opportunities to supervise other Honours students.
