Examination and Modeling of Rheological Properties of Middle to High Viscosity Foodstuff. The rheological behavior of commercial food suspension and emulsions in dependence of time, temperature and shear rate was investigated and under consideration of different mathematical modeling approaches evaluated. On this basis a general predictive equation was developed, which allows the estimation of the rheological characteristics of a food dispersion with comparable composition.
