Geoffrey Knott
Co-CEO, Director & Co-Founder @ edibl - The UK Insect Company
About
I build ventures and innovation systems by turning research into real-world impact.I’m a Co-Founder & Co-CEO of edibl®, the UK’s leading house cricket producer, where we’re developing sustainable protein systems through indoor vertical farming and supplying ingredients and white-label solutions to food and nutrition businesses.Alongside this, I founded HOP®, a consumer brand bringing insect protein into sports nutrition and focused on making novel, sustainable ingredients commercially viable and accessible.Beyond my own ventures, I’ve designed and delivered innovation and entrepreneurship programmes within universities, including founding the Surrey PhD Accelerator which is supporting researchers to translate science into ventures, partnerships, and real-world outcomes. My work sits at the intersection of: venture building, research commercialisation, emerging technologies (food systems, biotechnology, sustainability), and regulatory innovation (including UK novel foods policy).I’m a Fellow of the Royal Entomological Society (FRES) and actively contribute to shaping the UK’s novel food landscape through industry and policy engagement. I currently lead UK industry engagement on novel foods and insect protein through the UK Edible Insect Association (UKEIA).Previously, I worked in space technology R&D, developing small satellite systems - an experience that continues to inform how I approach deep tech, systems thinking, and innovation.
