With my ETH-IFNH Food Process Engineering group (FPE), I focus on Process-Structure-Property (S-PRO2) interactions in food/biomaterial systems, coupling the fields of food process engineering and bio material sciences with focus on novel developments in process engineering. This is implemented in a food systems approach along the entire food value chain from in field / post harvest / in factory to oro-gastro-intestinal processing. The S-PRO2 scheme thereby represents a hierarchical, functional structure centred, multi-scale approach considering characteristic length and time scales by reverse engineering.
