As a Senior Scientist I was responsible for new meat product development for strategic accounts. I received culinary training from a Certified Master Chef, to compliment my food scientist skills.

In this position I managed the R&D, Applications Research and Business Unit functions for a global protein based ingredient supplier. I managed a team of 9, traveled globally to assist customers, and had P/L responsibility for a >$30MM business unit.

Managed the product and process development areas for the Foodservice portion of the business. Grew new product sales by >200% in year 1, which included more that 40 new product introductions that year.

As the Chief Technology Officer for Costout LLC, I consult for Food Industry clients in the areas of Business Developoment, New Product Development, Concept Validation, Process Improvements, Formulation Optimization, and Cost Savings Initiatives. I possess unique skills in Ingredient Technology, which are used to improve profitability for my customers. My current Principle Clients include Wenda Ingredients, and SPI Group. In this role I coordinate all research and application trials for the unique line of functional ingredients offered by Wenda. This includes best value phosphate solutions [Wendaphos], patented food safety products [Prosur], best value hydrocolloid products [WBS], natural phosphate replacers [NatureBind] and functional beef proteins [NovaPro]. I offer Technical support to our strong group of Distributors, which includes my former consulting client SPI Group. Our application work has developed new to the world protein products, and cost savings that were beyond Customer expectations.
